How to Make Enchilada Sauce


Enchilada is a Mexican dish, basically enchiladas are bread scones reminding crepes with meat or vegetable stuffing. Not matter how great your stuffing and scones are, you won't get perfect enchiladas without spicy homemade enchilada sauce. Here we offer you one of the best enchilada sauce recipes and a chicken stock recipe in case you want to make sauce from scratch.



Enchilada Sauce:

  • 2 chili peppers;
  • 3 large onions or 6 small ones;
  • 2 garlic cloves;
  • 2 large tomatoes or 3 smaller ones;
  • 2 cups chicken stock (homemade or just a stock cube);
  • 2 tsp cumin;
  • 1 tsp oregano or basil;
  • Salt and pepper to taste.

Chicken stock:

  • Chicken;
  • 1 2 Carrots;
  • An onion;
  • Vegetable oil for frying;
  • 2 Bay leaves;
  • Herbs and spices (optional);
  • Chicken beef / pork bones (optional);
  • Fresh greens (dill, parsley, green onion)
  • Salt and pepper to taste.


Pepper and garlic

Preheat a frying pan (just a little bit) and place chili pepper in it. No oil needed. Fry it on low for 3 minutes, then flip and fry 3 more min. Soak fried peppers in boiling-hot water for a few minutes. Chop onions and fry them in oil for a couple of minutes (on low), till they start turning gold. Add chopped garlic cloves, in a couple of minutes (when onions turn gold) remove the pan from the heat.

Tomato puree

Make small cuts in tomatoes and place them in boiling water. In a couple of minutes their skin will get soft and easy to remove. Peel and chop tomatoes, whip them using mixer to make tomato puree.


Combine chili peppers, half a cup of water you soaked them in, add fried onions and garlic cloves, tomato puree and 2 cups chicken stock; blend the mixture.

Final step

Sieve the sauce. Add cumin and oregano / basil. Boil sauce on low for 20 minutes, till it gets thicker. If you get it too thick, add some more chicken stock. Taste the sauce. Add salt and paper to your taste.

Place chicken in a pan full of water, bring it to a boil and dimmer. Remove the foam, add bay leaves and salt. Cut vegetables in large pieces and add them to stock. Boil for 50 min, then add spice and greens and cook 5 10 more minutes. Strain the stock.


  • Don't serve Enchilada sauce to children, it may hurt their tender stomachs.
  • Don't make too much sauce if it is your first time - you may need a little practice.
