How to Make Cake Flour

Cake flour recipe
- all-purpose flower (as much as you need);
- corn starch Ė 2 scoops per each all-purpose flour cup;
- a sieve, a saucepan, a cup, a scoop (measuring spoon);
Make cake flour
Grab all-purpose flour with a cup, but make sure the cup isnít too full (i.e. there is no hill or anything, it should be one level cup). Then remove two scoops all-purpose flour and add two scoops of corn starch instead. So basically, itís 1 cup of cake flour, two scoops of which are corn starch.
Sieve cake flour
The secret of a good fluffy cake is sifted flour: when you sift it, it gathers oxygen which makes dough so tender and helps it rise in the oven. Sifting cake flour once isnít enough Ė if you want your cake to be perfect, do it at least 4 Ė 5 times. After you prepare cake flour, make a pie or a cake as it says in your recipe.
Simple white cake recipe
- 0.5 cup butter;
- 2 eggs;
- 1.5 cup cake flour;
- 1.5 tsp. baking powder;
- 0.5 cup milk.
Melt 0.5 cup butter and mix it with 1 cup sugar, add 2 eggs and whip the batter. Add 1.5 cup cake flour and 1.5 tsp. baking powder, mix well. Add 0.5 cup milk, whip the batter, preheat the oven in advance and bake your cake in the preheated oven for 30 min. at 350° F. Take out your cake, if itís bouncy to the touch Ė itís done.
Donít make flour in advance
Donít make cake flour in advance. If you do, remember to sift it a few more times before baking - itís essential. If you buy cake flour from a store instead of making it yourself, sift it before baking, too.
Donít forget to sift flour
Always sift flour regardless of what exactly you cook. If you bake, you probably want your cake, pie or cupcakes to be fluffy, this is what sifting is for, and this is why this step is not optional. If you want to bake perfectly, keep this in mind.
